ready veal is cut and packaged at the processing
plant. The meat is packed in a modified atmosphere
container to allow for greater shelf life,
typically, twelve days after packaging. Packaging is
available where veal may be stored up to 30 days and
has 3-days shelf life in the case.
Since the
product is already packed, shelves can be
restocked quickly, reducing the possibility
of lost sales.
